Microwave-Safe Baking Vessel – To make this magical bread you don’t even need an oven! The bread bakes in the microwave so you will need a safe dish to bake with. Mugs make great microwave-safe baking dishes and some ramekins are also microwave-safe. If you’re not sure about your vessel, flip it over and look for handling instructions on the bottom.

Ingredients

Almond Flour – I love using almond flour in gluten-free baking. It has a great texture and flavor for so many recipes; plus, almond flour is low-carb, protein-rich, and loaded with nutrients like fiber, iron, and calcium. 

Baking Powder – Baking powder is a leavening agent made from baking soda and an acid. This means you can make it at home using baking soda and cream of tartar. 

Baking powder helps give the bread a boost so you end up with a nice fluffy breakfast bread. 

Ground Flax Seeds – Flax seeds add substance to this delicious bread. Flax seeds are rich in healthy protein and fiber so adding a little of this ingredient to your breakfast is a great way to start your day off on the right foot! 

Egg – Egg enriches the bread dough with a little fat and acts as a binder in this simple breakfast. If you are eating plant-based you can trade the egg for Just Egg or another vegan egg substitute. 

Sparkling Water – This is an old baking trick where carbonation helps make the recipe rise. The fizziness of sparkling water gives the bread a beautifully light and airy texture. 

Don’t mistake seltzer water for sparkling water. Sparkling water is naturally carbonated; whereas, seltzer has sodium bicarbonate added to it. Too much sodium bicarbonate can add an unpleasant flavor, so stick with pure sparkling water. 

Everything but the Bagel Seasoning – Bagel Seasoning or sesame seeds add a really great flavor and crunch to the bread that will transport you to your favorite cafe. Look for this popular seasoning in the spice aisle near other spice blends. 

Butter and Eggs – I think the tastiest and most filling way to top this bread is with cooked eggs and a smear of butter. You can follow my tips for deliciously cooked eggs or enjoy the bread with your own favorite toppings!

Ingredients
  

90-Second Keto Breakfast Bread Recipe

    Ingredients:

      For 1 Serving of 90-second Keto Bread:

      • 1 tbsp almond flour
      • ¼ tsp baking powder
      • 1 tbsp ground flax seeds
      • 1 egg
      • 1 tbsp sparkling water
      • 1 tsp everything but the bagel seasoning or a mix of white and black sesame seeds

      For the Bread Topping:

      • 1 egg I made 4 servings so I used 4 eggs
      • A little butter

      Instructions
       

      Directions:

      • Add all the ingredients to a medium-sized microwave-safe bowl or a mug, and microwave for 90 seconds. Be careful when you take the bowl or mug out of the microwave as this will be very hot, use a cloth to remove it from the microwave.
      • Let it cool before you flip it upside down to remove the bread.
      • For the egg topping, I used a Saucepan for 4 eggs to make the perfectly round small egg shapes. See the link for the exact saucepan below. It's perfect for making 4 fried eggs at the same time! Crack 4 eggs in the pan, season with some salt and pepper, cover for a couple of minutes, then remove from the pan.
      • Once the 90-second bread is cooled, cut the gluten-free bread in half, smear some butter on it and place the fried egg on top, cover with the other half.
