For this cook choose a medium or large skillet with a lid. A non-stick can help you when it comes time to remove the pie but always look for a nonstick without PFAS.

Ingredients

Zucchini: Fresh zucchini is full of juicy leafy, green flavors that deserve to be spotlighted and this delicious dish does just that! Every bite of this creamy and rich pie is loaded with fresh zucchini flavor and nutrition!

Red Onion: Red onions are actually purple in color but don’t hold the misnomer against them, because they’re positively delicious in this dish. This variety of allium has a slightly more spicy flavor than yellow or white onions, so they’re perfect for adding onion flavor with a little sizzle.

Eggs Eggs: are an amazing ingredient that adds flavor fat, and nutrition to this pie. Eggs are made up of two familiar elements, the yolk, and the white, but fewer people are familiar with the purpose of each part. Zucchini Pie Recipe

    Ingredients:

    • 1 zucchini cut into squares
    • 1 red onion cut into small squares
    • 4 eggs
    • 1 tsp sea salt
    • ½ tsp pepper
    • 1 bunch of parsley chopped
    • 100 gr feta cheese

    Instructions
     

    • Step One - Mix the eggs, salt, and pepper, and then fold in the parsley.
    • Step Two - Preheat a medium with olive oil, sauté the red onions until golden brown, before adding in the zucchini and sautéing until the zucchini is soft and golden brown. Add in the egg mixture, and quickly mix to combine.
    • Step Three - Cover and let it simmer on low heat for up to 10 minutes then carefully flip the pie and let it rest in the skillet uncovered.
    • Step Four - Remove the pie from the skillet, top with the feta cheese, and enjoy your delicious meal!
