  • Frying Pan - Everyone loves a one-pan meal, especially when you just woke up! That is why all you need for this delicious dish is a frying pan. Just be sure to choose a pan large enough for your keto tortilla to sit fat in.

  • Eggs - You can’t have breakfast without the eggs! For this delicious dish choose fresh medium to large eggs and make sure you beat them well. Beating helps bring some air into the eggs so they become nice and fluffy when cooked.
  • Sea Salt and Pepper - Salt and pepper are everyone’s favorite culinary pair, without them our food would be bland, but they also add nutrients. Together these two seasonings cannot be stopped! Sea salt is less refined than table salt so it has trace amounts of minerals and this salty staple helps your body stay hydrated. While pepper has enough manganese to support healthy tissue generation.
  • Olive Oil - Lean and light olive oil is the perfect cooking fat for most situations and this wrap is no exception. Olive oil is the first choice any time you need a light and neutral-tasting fat. It has no cholesterol which makes it far more heart-healthy than cooking with butter.
  • Low-Carb Tortilla - In today’s grocery stores you can find all manner of keto-friendly and low-carb bread alternatives including low-carb tortillas. Many major brands make their own take on this lighter option, so choose your favorite variety to bring structure, taste, and texture to this yummy wrap.
  • Mozzarella Cheese - A fresh cheese coming from cows mozzarella has an unforgettable flavor and semi-soft texture that makes it one of the world’s favorite cheeses! In this low-carb wrap, the mozzarella makes the egg gooey and loaded with melty cheese flavor!
  • Avocado - Have you ever wondered what an avocado is? Well it’s technically a fruit, but it acts like a vegetable much like a tomato. Regardless of what an avocado is, it tastes amazing especially when paired with cheese and eggs!

Low-Carb Tortilla Egg Wrap Recipe

    • 2 eggs
    • A pinch of sea salt and pepper
    • 1 tsp olive oil
    • 1 low-carb tortilla
    • 2 tbsp grated mozzarella cheese
    • ½ ripe avocado

    • Mix the eggs with the salt and pepper and beat well to combine.
    • Heat up a frying pan with the olive oil until hot, then turn the heat down to medium to low, pour in the egg mixture, sprinkle a tablespoon of the grated cheese on top of the eggs then place the tortilla over the egg and mozzarella. Let it cook for a couple of minutes until you see the egg starts to thicken, then flip the egg tortilla over and let the tortilla cook for a minute or so. Add the slices of avocado and the rest of the cheese and fold the tortilla in half.
    • Remove from the heat and serve with some fresh greens, some cherry tomatoes, and low-fat dressing.

Enjoy and love your pure plate.

      Expert Notes
      • Be careful not to flip too soon. Wait until the egg looks fluffy, thickened, and crisp at the edges to avoid any tears or mess.
      • This low-carb breakfast is best when enjoyed fresh and warm. Try the egg wrap solo or with a fresh salad to start your day with a satisfying and savory flair!
      • This wrap is made to be enjoyed at the moment, but you can still save the leftovers. Keep extra in an airtight container in the fridge for up to 3 days. Enjoy the leftovers cold or reheated in the microwave or on the stovetop.
