Olive Oil – Olive oil is the first choice of lean cooking fats. It is loaded with healthy antioxidants and has a very neutral flavor.

Ground Beef – Choose a lean ground beef to bring some satisfying protein to the meal. If you want to make it even lighter you can use ground chicken or turkey instead. 

Onion – Fresh onion helps build the savory flavor in the meat mix for this Zucchini Gratin. A yellow or white onion is a great choice to bring that excellent note of onion.

Ingredients
  

Zucchini Gratin Recipe

    Ingredients:

    • 1 tbsp olive oil
    • ½ kg ground beef
    • 1 onion diced
    • 2 cloves of garlic minced
    • 1 tsp oregano
    • 1 tsp thyme
    • 1 tsp dried parsley
    • 1 tsp paprika
    • 1 tsp garlic powder
    • 2 zucchini slices with a mandolin
    • 4 egg
    • 1 cup heavy whipping cream
    • 2 tbsp cream cheese
    • A handful of Shredded goat cheese

    Instructions
     

    Directions:

    • Heat up a pan with some olive oil, add the onions, ground beef, and spices, and stir until they are done, this should take about 10 minutes. Add the ground beef mixture to a baking dish and set aside.
    • Slice the zucchinis with a mandolin into thin circles, then stir fry the zucchinis on medium heat until golden brown. Tip: Cook the zucchini in the same pan as the ground beef, this will give them extra flavor. Add the cooked zucchini to the casserole, spread the zucchini evenly on top of the ground beef, and set aside.
    • In a mixing bowl mix the eggs, the heavy whipping cream, and the cream cheese. Use a whisk to combine well then pour the mixture evenly over zucchini and ground beef.
    • Lastly, top the casserole with shredded goat cheese and bake at 200C/400F for 25 min or until you see the cheese turns golden.
