Equipment

Skillet – The trick to getting the most flavor out of this dish is to cook the aromatics and beef together and then brown the zucchini in the same pan. This makes for even more meaty flavor with fewer dishes and who doesn’t love that!?

Mandoline Slicer – A mandolin allows you to create beautiful thin slices of zucchini in no time! If you do not have one, use a steady hand to cut very thin zucchini rounds.

Baking Dish – To contain and cook all the succulent creamy filling choose a large oven-safe baking dish.

Ingredients

Olive Oil – Olive oil is the first choice of lean cooking fats. It is loaded with healthy antioxidants and has a very neutral flavor.

Ground Beef – Choose a lean ground beef to bring some satisfying protein to the meal. If you want to make it even lighter you can use ground chicken or turkey instead.

Onion – Fresh onion helps build the savory flavor in the meat mix for this Zucchini Gratin. A yellow or white onion is a great choice to bring that excellent note of onion.

Garlic – Freshly minced garlic makes the ground beef positively irresistible. Fresh is always best, but having a jar of peeled cloves in the fridge never hurts!

Dried Oregano, Thyme, and Parsley – Dried oregano has a great mildly sweet herbal aroma. Add the earthy herbal flavor of thyme and the savory leafy flavor of parsley and you have the perfect herb blend to amp up the rustic flavor in this gratin.

Fresh herbs can always be substituted for dried, but they are less strong in flavor. To combat this, just use more fresh than dried.

Paprika and Garlic Powder – These two dried spices round out the flavor with a bright color and earthy, sweet, peppery, and complex flavor.

Zucchini Zucchini is the star of this magnificent meal. It brings color, texture, and fresh vegetable flavor to the bake. Use fresh, ripe zucchini, and be sure to choose one that is nice and large to make using the mandoline even easier.

Egg – Egg is the ultimate multipurpose ingredient in the kitchen. In this dish, it adds rich, creaminess to the sauce and it helps to bind the gratin together.

Heavy Whipping Cream – Luscious heavy whipping cream makes this baked dish so saucy and delicious.

Cream Cheese – This ingredient adds saltiness and mild yet decadent cheesiness to the zucchini casserole. You can opt to use low-fat cream cheese or Neufchâtel cheese as equal substitutes.

Goat Cheese – Goat cheese is the final cheesy note inside the casserole. It rounds out the flavor with its zesty tang and extra-creamy flavor.

    • 2 tbsp cream cheese
    • A handful of Shredded goat cheese

    Instructions

    Directions:
