Low-Carb Tacos – You can’t have tacos without the shell! To build these tasty tacos right, choose your favorite brand of low-carb or keto-friendly tortillas, or if you’re all about homemade, whip up a batch of low-carb tortillas at home!

Ground Beef – These meaty burgers are made with a lean blend of ground beef. Ground beef is the classic choice for burgers and it adds tons of healthy iron and protein to this recipe. However, if you want to go leaner you can swap the ground beef for ground turkey, chicken, or a blend of ground meats.

Onion – Earthy and aromatic onion will get your mouth watering and bring in some of that familiar burger joint style! Choose a yellow or white onion for a well-rounded sweet and savory onion flavor.

Salt and Pepper – Great meat doesn’t need much, but you will need to season it with salt and pepper.

Cheddar Cheese – Delectably sharp cheddar cheese is loved around the globe for its creamy yet salty flavor and in this recipe, it really shines! The cheddar melts on the burger making a nice gooey middle for your yummy smashed taco.

Fresh Greens – Even wildly creative tacos like this need a little freshness and greens are the way to go! Choose your favorite mix of salad greens to bring a healthy plant crunch to the top of these yummy tacos.

The Sauce

Low-Fat Mayo – Every great burger needs a burger sauce, so these tacos are dressed with wonderful homemade burger sauce. That all begins with low-fat mayo. This common egg-based condiment has the right amount of creaminess and fatty flavor to make a smooth and luscious burger sauce.
If you do not have mayo on hand, try swapping it with low-fat Greek yogurt or low-fat sour cream.

Mustard – The zippy tang of a prepared mustard is a must-have for any burger, or in this case taco. It adds an earthy zest that cannot be beaten. Use yellow or your favorite brown mustard for this simple sauce.

Ketchup – Ketchup is the perfect sweet and savory condiment! To keep the sauce low-carb opt for a low-carb or sugar-free ketchup.

Pickles – The crunchy fermented vinegar flavor of cucumber pickles adds excitement to the tangy sauce. Use your favorite variety of dill pickles for this recipe.

Paprika – To finish the sauce with a colorful peppery pop, grab some smoky ground paprika.

Expert Notes

  • If you want the cheese to melt quickly but don’t have a lid that fits your skillet, try using an upside-down down as a makeshift lid. It will trap enough steam to really get the cheese melting!
  • These tacos are made to be enjoyed warm, topped with yummy sauce and fresh greens! Pair them with your favorite low-carb beverage for a fast-casual-inspired night at home!
  • To store any extra Smash Burger Tacos, transfer them to an airtight container. Store them in the fridge for up to 4 days and store any extra sauce separately. Reheat the tacos in a hot pan or in the microwave.

    • 5 Low carb tacos
    • 500 gram ground beef
    • 1 onion diced
    • Salt and pepper
    • 5 slices of cheddar cheese
    • Fresh greens Use any green you like, I used mixed green.

    For the sauce:

    • 2 tbsp low-fat mayo
    • 1 tbsp mustard
    • 1 tbsp ketchup
    • 2 large pickles diced into small pieces
    • 1 tsp paprika

    • Smash a ball of ground beef on top of the taco and press it down until it's evenly divided onto the taco, sprinkle some diced onion, salt, and pepper over the meat.
    • Cook the taco with the meat facing down in a heated skillet with some olive oil for about 5 minutes, then turn the taco around and cook the taco very short, approximately 1 to 2 minutes. Place a slice of cheddar cheese over the meat and let it melt while cooking the taco. You can cover it for a faster result.
    • Mix the sauce by combining the mayo, mustard, ketchup, pickles, and paprika in a small bowl and mixing until thoroughly combined.
    • Remove from the heat and garnish with some leaves of the greens and a scoop of the sauce.
