Avocado Shrimp and Strawberries Salad

Avocado – Fresh avocados bring the creamy richness your body craves without any of the guilt. They are a clean healthy form of plant-based fat that can actually benefit your body, unlike other less savory forms of fat.

Avocados are filled with fiber and they even bring a little protein to the table. Plus, they can help lower bad cholesterol levels.

Since this soft fruit makes up the heart of this shrimp salad, try to pick barely ripe fruits. This ensures that the avocado is still nice and firm so it can hold its shape when cubed and mixed.

Red Onion – Beautiful red onion is the perfect type of onion for any recipe that needs a little raw onion flavor. It has a mild peppery aftertaste that helps to make this fresh salad really pop. Plus, the vitamin C in this root vegetable helps support your immune system.

Strawberries – Gorgeously fresh strawberries taste like warm weather and juicy sweetness. They might sound like a surprising match for shrimp and avocados but their pleasant sweetness plays in perfect harmony with the briny rich flavor of the shrimp.

Shrimp – Cooked shrimp is an all-star ingredient in this dish. They are full of salty, oceanic flavor and lots of delicious nutrients, including protein and healthy cholesterol.

Olive Oil – This lean cooking oil is the health-conscious chef’s first choice for making dressings. It is lean and mild in flavor making it the perfect choice for light and fresh dressings.

Honey Mustard – Honey mustard is a smooth combination of sweet and tangy flavors and in this salad, it ties together all the different flavors.

Lemon Juice – Lemon juice has tons of fresh citrus flavor and plenty of healthy vitamin B6 to support the healthy processing of sugars in the body. Use fresh squeezed whenever possible but bottled lemon juice is an excellent substitute.
