For the Chicken:

  • Chicken Legs For this recipe you will need lollipopped drumsticks. See the video for more details on how to cut the chicken for this recipe.
  • 1/2 tbsp Coriander Dried coriander gives the chicken a nice earthy and savory flavor.
  • 1/2 tbsp Cumin This spice makes meat fragrant and flavorful!
  • 1/2 tbsp Oregano Dried oregano is best but you can swap it for fresh; however, if using fresh, multiply the amount you add by 3.
  • 1/2 tbsp Chicken Seasoning This spice blend combines herbs and seasonings that are perfect for chicken. It is sometimes labeled ‘poultry seasoning’.
  • 1/2 tbsp Paprika Smoked paprika is best for this recipe.
  • 1 tsp Salt Choose fine-grain sea salt.
  • 3 tbsp Olive Oil This ingredient helps the marinade stick to the chicken nicely.
  • 3 tbsp Low-Fat Yogurt Choose your favorite plain-flavored low-fat yogurt.
  • 3 cloves Garlic Freshly chopped garlic is best but in a pinch, you can use jarred or frozen.
  • 1/2 tsp Chili Powder This staple seasoning adds a little heat to the chicken. Add 1 tsp if you like it extra spicy.

For the Sauce:

  • 1 tbsp Olive Oil Acts as the cooking fat for this sauce.
  • 1 tbsp Garlic Fresh garlic is best but jarred and frozen also work.
  • Coriander Fresh chopped coriander brings an irresistible herb flavor to the sauce.
  • 1 tsp Cumin Choose dried cumin for this sauce.
  • 1 tsp Paprika Sweet or smoked paprika will work to bring a peppery punch to this sauce.
  • 1 tsp Salt Fine-grain sea salt is perfect for this sauce.
  • 1/2 cup Chicken Stock or Chicken Bouillon A little stock helps to thin the sauce. If you’re watching your salt intake choose a low-sodium stock or cube.
  • 3 tbsp Yogurt You can use the same plain low-fat yogurt from the marinade for the tasty sauce.
  • 2 tbsp Sugar-Free Ketchup Use store-bought or homemade sugar-free ketchup to add some tomato-based sweetness to the Piri Piri sauce.
  • 2 tbsp Raw Honey You can also swap this ingredient for commercial honey in a jam.

Instructions
 

  • Preheat an oven to 200°C/400°F.
  • Mix the marinade and massage it into the chicken well.
  • In a large bowl, combine the chicken with the marinade ingredients. Massage well to coat the chicken in seasonings.
  • Place the chicken on a baking sheet lined with parchment paper, make sure the chicken can stand on itself, like in the video, and bake in a preheated oven for 1 hour at 200°C/400°F.

To make the sauce:

  • Heat a small saucepan and add the oil, garlic, and dried spices. Stir to coat.
  • Stir in the remaining sauce ingredients and mix well.
  • Bring the pot to a simmer and allow it to simmer for a couple of minutes or until it thickens.
  • Drizzle the sauce over the chicken.
